Sun ripened tomatoes with bocconcini cheese basil and balsamic vinaigrette
Thai rice noodle salad with sesame, chicken and pineapple in a lime and cilantro vinaigrette
A mesclun mix tossed with our “not-yet world-famous” vinaigrette
A field cucumber, red onion, sweet pepper and tomato salad with an oregano and olive oil dressing



The Meats

Marinated loin of pork with cumin, coriander, ginger, garlic,and curry spices
Beef Steak marinated with peppercorn and rosemary
Chicken breast marinated with lemon, garlic, oregano and olive oil
Chicken breast marinated with cocoa, garlic and cilantro
Lamb cut from the leg with fresh peppermint and peppercorn
Salmon papillote with Pastis and herbes de Provence


The Side Dishes

Traditional ratatouille – onions, zucchini, eggplant, pepper all sautéd and stewed in a rich garlic and tomato sauce
Moroccan tajine – gently simmered vegetables, olives, preserved lemons, garlic and spices like cumin, ginger, pepper, saffron and turmeric
Corn on the cob

Marinated berries with orange liquor
Flambé berries
Fruit cheese cake
